How can anyone love a salad.. well do I have a story for you.
In 2018 I started dating this burly guy (one whom had a gold card to McDonalds and Starbucks) and his form of church was chicken wings on Wednesday…. then I waked in. Well fast forward to 2024, this big handsome burly plumber love’s Kombucha ( my homemade stuff) and asks for my salad, the ” I love you” salad.
This recipe is SUPER easy, and I can usually make it for under 20$.
” I love you” Salad recipe:
- 1 Box of organic mixed greens
- 1 Organic avocado
- 1 bottle of Organic Greek dressing ( I get the calorie wise, low fat)
- 1 Vegan bocconcini cheese ( there the little balls and I slice them into half’s..for the longest time my boyfriend had NO idea they were vegan.. took him 7 years to find out LOL)
- 1 small bag of Vegan/ GF pretzel sticks ( smash these with your hands, they mimic croutons)
- 1 container of Organic grape tomatoes ( cut in half)
- 1 organic, oven baked rotisserie chicken ( no spice) – I strip the whole chicken off the bones and throw away the skin … I put the left overs into a Tupperware for his lunches during the week.
- 1 organic cucumber ( cut in half then sliced into bits)
To make the salad its SO EASY. I throw it all together, some chicken off the bone, pretzels, cucumber, tomatoes, salad, avocado then dress it.
Its surprisingly healthy and can be made vegan ( no chicken )
Usually over the summer we eat this almost every weekend with NO leftovers!
