Treat Thursday at the Exchange

Happy Thursday!

You know what that means… its almost Friday ( friyeahh!) We are heading into the weekend!!!! That means most of us will be binge watching Bridgerton while munching out on some yums. When Monday rolls around we step on the scale or put on our work pants and go ” these seem tight”… that weekend salty/surgery session has something to do with it.

Why not try something HEALTHY and delicious that way we don’t dread Monday ( ….Mondays are already hard enough)

Here is my latest and greatest healthy cookie dough HACK!… We have all seen on social media the chickpea cookie dough recipe… well this is my version of it.

Healthy Happy Edible Cookie Dough Recipe ( G/F and V) – if you want 😉

You will need:

  • 1 can of chickpeas – rinsed and drained
  • 2 tbsp of unsalted butter ( I use plant based un salted)
  • 1/4 tsp of pink salt ( if using salted butter or planted based salted butter cut this out)
  • 2 tbsp vanilla
  • 2 tbsp of maple syrup ( you can use the low sugar if you prefer… but remember maple syrup is the heathy sugar)
  • 1 tbsp honey
  • 1/4 tsp of baking powder ( this gives it that cookie dough taste.. TRUST ME)
  • 4 tbsp oat flour ( you can use other plant based flours but if it is the AP flour microwave it for 30 seconds to heat treat it)
  • 2 tbsp of oat milk ( you can also use regular milk or other plant based milks)

BLEND ALL TOGTHER.. then add some chocolate chips or cinnamon or coco powder and PRESTO you have cookie dough!

I keep mine in a Tupperware for about a week ( if I cant eat it all in one sitting ) this recipe makes about 10 servings , each serving and adds up to about 100 calories!
